First I must say I LOVE to cook and could probably fill this section with tons of recipes! My hubby loves my blackened chicken and this can be used for fish as well...

2 tablespoons paprika
2 teaspoons salt
2 teaspoons lemon pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground red pepper
1 1/2 teaspoons dried, crushed basil
1 teaspoon onion powder
1 teaspoon dried thyme
1 cup unsalted butter, melted
2 tablespoons of olive oil

Spread 1 Tablespoon of olive oil on skillet. Heat iron skillet on high 5 minutes. Mix all seasonings, melted butter and 1 table spoon in a bowl. Dip chicken in melted butter and seasonings. Place fillets in hot skillet and cook on each side.

In my opinion this is best served with yellow or white rice. You can alter seasonings to your tasting if it is too hot for you. Enjoy:D

sorry my bad I guess I should also tell you this recipe is for 4-5 chickens preferably boneless and skinless!
