most people think sponge simple and it is but how many of you does the sponge dry out the day after baking? how many of you would belive me if i told you with this recipe your sponge will stay moist for a full 7days+? well i can and you can make it to its easy just follow this recipe:-

10oz low fat/salt butter
10oz sugar
10oz gluten free flour
4 egg white
150ml semi skimmed or skimmed milk
teaspoon vanilla essence
and then 5oz of what ever you wish to add if anything.

1.pre-heat oven 180 for 10mins+
2. mix the butter and sugar together into a paste,
3. add the egg whites and mix well so no egg residue is left
4.gradually add flour keep mixing
5. add the milk untill the mix is runny but not like liquid just untill its sightly sticking to the spoon/whisk
6. grease prof a cake tin
7. place in over and leave for 12mins check with a thin blad knife through the middle if not cooked through place tin foil over the top to cover and put back in the oven for a ferther 5mins and check again repeat if still not cooking. DO NOT TURN HEAT UP AND DO NOT HAVE OUT OF OVEN LONGER THEN 1MIN!!
