I need help!! Last night couldn't sleep so decided to try a recipe I had for apple and cinnamon muffins. They came out disastrously!!!! They certainly were the wrong texture for muffins, were rock hard on top and the inside was a really horrible wet consistency (I don't mean wet= undercooked, I think it was to do with the apple)

Anyone managed to successfully make them?? Or blueberry ones??

350g of self raising flour, 75g butter, 50g sugar 2 eggs, half pint milk, 2 tsp cinnamon, one cooking apple ( I used half as it was huge) and one dessert apple, chopped into little pieces.

One of the problems I think was that I used fairycake papers instead of the larger muffin cases but I don't think that would have affected the texture???
