Ok, here goes: (Makes approx 6 big bowls!)
Ingredients:
1 large pumpkin (remove seeds etc, cut out all flesh and cut into 1 inch sized chunks)
1 red onion (chopped small)
2 garlic cloves (peeled and pressed)
4 large carrots (chopped into small pieces)
1 sweet potato (chopped into small pieces)
1 tin of chick peas
1 Ltr veg stock
spices: salt, black pepper, cinnamon, cumin, cayenne pepper, nutmeg.
1 smoothie maker/ blender
How to make it:
* Get one VERY LARGE (or two bigger average size) heavy bottom saucepans, melt a little butter or use olive oil and chuck in the onions and garlic on a low heat for 5-10 mins til soft, dont let it burn or go crispy!
* Add the pumpkin, carrot and sweet potato, put the lid on the pan and leave on a med-low heat for 10-15 mins, stirring regularly to ensure it doesnt burn- all the juices will start to come out of the pumpkin as it warms up so you dont need to add ANY liquid at this point.
* Once you can see the pumpkin juices etc filling the bottom of the pan and the carrots (as these generally takes the longest) have started softening up add the stock, and the salt and black pepper. Finally add the chick peas.
* Once the carrots etc have softened enough (think the softness of potatoes before you mash them), take off the heat and put all contents of pan in blender at once...Blend down until its a thick, creamy consistency, should only take about 30ish seconds for each lot depending on how much you put through at a time.
* Once it is all blended, put back in the saucepan and onto a low heat, have a taste and start to add the other spices according to taste. I put about 1-2 tbsps of cayenne in as i like it quite spicey, but match its quantity with the cinnamon as it adds a sweetness, balances it out and gives and more ooomph to the taste!
For some reason mine was missing 'something' and doesnt taste as it did last time.... and i cant figure out what it was, it might have just been that i had run out of black pepper so there isnt much in this batch... but if anyone else can recommend any other missing ingredients id appreciate it! :D
The main reason i add carrots and sweet potato is because it adds to the colour, as well as being good fillers to make it go a bit further without effecting the taste!!!
